As we all modify our eating habits after the holidays, I thought I’d share a tasty and healthy recipe that the Wayne County Bed and Breakfast Association  created in which they use delicious New York State Apples.  The Wayne County B&B Association in the Finger Lakes, New York region boasts 13 Members with lodging options ranging from stately Victorian ladies, to charming Victorian farm houses and from romantic cobblestone inns to intimate cottages.

APPLE CHICKEN STIR-FRY

1/2 C. onion, vertically sliced
1 C. (2 medium) carrots, thinly sliced
1 1/2 tsp. vegetable oil
1 tsp. dried basil, crushed
1 C. fresh Chinese pea pods
1 Tbs. water
1 medium New York State apple, cored and thinly sliced
1 lb. cubed, boneless, skinless chicken breast
1 tbs. oil
2 C. cooked rice

Stir fry cubed checken breast in 1 Tbs. vegetable oil in non-stick skillet until lightly browned and cooked.  Remove from skillet.  Stir-fry onion, carrots and basil in oil in same skillet until carrots are tender.  Stir in pea pods and water; stir-fry 2 minutes.  Remove from heat; stir in apples.  Add to chicken, serve hot over cooked riced.  Makes 4 servings.

Nutrient analysis per serving: Colories – 365; Fat – 9 g; Cholesterol – 62 mg; Fiber – 3 g; Sodium – 71 mg.  Percent calories from fat  – 22%

Lively Run Goat Dairy is home to many goats including, Alpine, Nubian, and Saanen, as well as cross breeds. Their cheeses contain no preservatives, or artificial additives. Their Chevre is made in the traditional French style, and presented in small logs, plain or herbed. The Cayuga Blue has been featured in many national publications and their Greek-style Feta has a devoted following.
